-1/2 cup ricotta cheese

Preparation Method

Begin by preheating the oven to 375°F. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and sauté for 1 minute. Add the salmon fillets and cook for 3-4 minutes per side until cooked through. Remove the salmon from the skillet and set aside.

Add the white wine and capers to the skillet and cook for 1-2 minutes until the liquid is reduced by half. Add the oregano, basil, salt, and pepper. Stir to combine. Add the spinach and cook until wilted.

In a medium bowl, combine the ricotta cheese, Parmesan cheese, parsley, basil, chives, oregano, and red pepper flakes.

To assemble the lasagna, spread 1/2 cup of the marinara sauce in the bottom of a 9×13-inch baking dish. Layer 4-5 lasagna noodles on top of the sauce. Top the noodles with 1/2 of the ricotta cheese mixture, 1/2 of the spinach mixture, and 1/2 of the salmon. Pour 1/2 cup of the marinara sauce over the salmon and sprinkle with 1/4 cup of the mozzarella cheese.

Repeat the layers with the remaining noodles, ricotta cheese mixture, spinach mixture, salmon, and marinara sauce. Top with the remaining mozzarella cheese.

Cover the dish with aluminium foil and bake for 25-30 minutes, until the lasagna is heated through. Remove the foil and bake for an additional 5 minutes until the cheese is melted and bubbly. Let cool for 5 minutes before serving.
