Tilapia in a Garlic-Spiced Oyster Sauce
Thai chilies give a lot of heat to a spicy garlic oyster sauce that goes excellent with tilapia.
Ingredients
Two tilapia fillets, 4 oz.To taste, kosher or sea saltTo taste, freshly cracked black pepperTwo tbsp unsalted butter (distributed)Three garlic cloves, mincedOyster sauce, two tablespoonsA couple of teaspoons of waterOne-two sliced Thai chillies1/4 cup cilantro, chopped
Directions
Clean the tilapia fillets by rinsing them and patting them dry. Salt & pepper to taste.
In a skillet, heat the oil on medium-high heat. One tablespoon of butter is melted, then the tilapia fillets are added. Cook for 1-2 minutes on each side, or until golden brown and thoroughly done. Set the fillets aside after removing them from the pan.
Add a tablespoon of butter to the same pan over medium heat, then whisk in the garlic—Cook for 1 minute, or until the vegetables are tender. Combine the oyster sauce, water, and chillies in a mixing bowl—Cook for 1 minute or until thoroughly heated. Turn off the heat.
Put the fillets on a plate and pour the sauce over them. Serve warm, garnished with cilantro.
Fish in oyster sauce stir-fried
Ingredients
500g fillets of firm fish, cut into piecesA couple of teaspoons of oilOne teaspoon ginger, minced1⁄2sliced into tiny strips of red capsicum1/2 green capsicum or yellow capsicum, chopped into small strips200g ofsnow peasOne tsp cornstarchA couple of teaspoons of oyster sauceOne teaspoon of soy sauceOne tbsp sesame oilA couple of teaspoons of water
Directions
Cook the fish in a hot frying pan or wok until golden brown, about 5/6 minutes.Take the fish out of the pan and put it to one side.Stir in the ginger, capsicum, and snow peas until the veggies are soft crisp, about 2 to 3 minutes.Combine the cornflour, oyster sauce, soy sauce, sesame oil, and water in a mixing bowl.Cook for 2 to 3 minutes in the pan, then add the fish and cook, tossing gently, until heated through.Serve with noodles or rice.

Cooking spray with a butter flavour
Two tbsp maize oil or canola oil
a quarter cup of oyster sauce

In a skillet, heat the oil over medium heat. Fill a skillet halfway with water and add the fillets. Butter the fillets and season them with lemon pepper and garlic powder—Cook for about 4 to 5 minutes. Then pour in the oyster sauce and turn the fillets gently—Cook for about 5 minutes, or until the fish begins to flake.
