Preparation method

Begin by melting the butter in a large skillet over medium-high heat. Once the butter is melted, add the flour and stir to combine. Cook for 1-2 minutes, stirring until golden brown. Add the chicken broth, sherry, cayenne pepper, nutmeg, mace, salt and white pepper and whisk until smooth. Bring the mixture to a boil, reduce the heat to medium-low and simmer for 5 minutes, stirring occasionally. 

Add the dry mustard, Worcestershire sauce, lemon juice, and tomato paste and combine. Add the crabmeat and stir to combine. Simmer for 5 minutes, stirring occasionally. 

Add the cream and stir to combine. Simmer for 5 minutes, stirring occasionally. Add the chopped herbs and stir to combine. Simmer for 5 minutes, stirring occasionally. Add the brandy and stir to combine. Simmer for 5 minutes, stirring occasionally. 

Remove the skillet from the heat and serve over rice or pasta. Enjoy!
