-1/4 cup vegetable oil

-1/4 cup cilantro, chopped

-3/4 cup frozen peas

-Salt and pepper, to taste

-1/2 cup almonds, toasted and chopped

-2 tablespoons ghee or butter

-1/4 cup golden raisins

-1/4 cup fresh mint leaves, chopped

-1/4 cup fresh cilantro leaves, chopped

-2 tablespoons freshly squeezed lemon juice

Preparation Method

  1. Begin by marinating the shrimp. In a medium bowl, combine the shrimp, yoghurt, garlic, ginger, cumin, coriander, turmeric, garam masala, chilli powder, cardamom, cinnamon, and cloves. Mix well and set aside to marinate for at least 30 minutes.
  2. In a large pot, heat the oil over medium-high heat. Add the onion and sauté until softened, about 5 minutes.
  3. Add the marinated shrimp and cook for 3-4 minutes, stirring frequently.
  4. Add the basmati rice, cilantro, and frozen peas. Stir to combine and cook for an additional 2 minutes.
  5. Add 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  6. Remove from heat and let sit, covered, for 10 minutes.
  7. Fluff the rice with a fork and stir in the toasted almonds, ghee or butter, golden raisins, mint, and cilantro.
  8. Serve with freshly squeezed lemon juice, and enjoy!
